In The Beginning

I learned how to grill back in Florida, many many years ago.  However it would be quite awhile before I started using what I was taught.  It was in 1992 when I bought my first charcoal grill and about 10 years after that before I got my first smoker.  The one you see here.  The Walmart special.  It was kind of like learning to drive a stick shift, in a car that had a horrible clutch.  Still I made some damn good food on that grill.  And that is what taught me what a truly good smoker is.

Texas Style

Living in Texas, taught me even more.  I never was all that big on beef, but when in Rome.  I found that I really didn't like mesquite, and beef taste just fine using hickory.  Oh but Texas had something way better to offer, then wood.  Texas taught me all about spices.  I found that heat is an acquired taste.  I started off with a small amount of jalapenos, and then cayenne and even beyond.  I perfected my rubs and the art of low and slow.  Heck if your looking you ain't cooking.
